Soft Biscotti

These biscotti can be served plain or dressed up how you like. Dip half of the slice in melted chocolate, drizzle chocolate on top, or dip entire slice in chocolate.

Ingredients

  • 6 eggs

  • 1/2 cup oil

  • 1 cup sugar

  • 2 tsp baking powder

  • 2 cups flour

  • 11/2 tsp baking powder

  • 2 tsp anise extract

Directions

  • Heat oven to 350°.

  • Beat eggs, then add sugar, oil, flour, baking powder, and anise. Beat until smooth.

  • Place parchment paper in 9x13 pan and pour in batter.

  • Bake for 25-30 minutes or until slightly brown. Check batter to ensure batter is done.

  • Remove cake from pan and set aside to cool for 10 minutes. Do not turn off oven.

  • Remove parchment paper from cake.

  • Cut cake into 1/2” - 3/4” slices.

  • Arrange slices on a baking sheet with parchment paper.

  • Put back in oven and bake for 20 minutes, flipping halfway through.

  • Remove from oven and place on rack to cool completely.
