Pignoli Cookies

Ingredients

  • 8 oz can almond paste

  • 1/2 cup granulated sugar

  • 1/2 cup powdered sugar

  • 1/4 cup all-purpose flour

  • 2 medium egg whites lightly beaten

  • 8 oz pine nuts

  • powdered sugar to finish

Directions

  • Heat oven to 300°.

  • In a food processor break almond paste into small pieces. Pulse in both sugars and flour.

  • Once mixture is finely ground, slowly add egg whites until dough comes together.

  • Pour pine nuts in to bowl

  • Use a spoon and slightly wet hands, scoop small spoonfuls of dough into the bowl of pine nuts. Roll around until coated and place on baking sheet lined with parchment paper.

  • Cook for 10-12 minutes or until done.
