Pignoli Cookies
Ingredients
8 oz can almond paste
1/2 cup granulated sugar
1/2 cup powdered sugar
1/4 cup all-purpose flour
2 medium egg whites lightly beaten
8 oz pine nuts
powdered sugar to finish
Directions
Heat oven to 300°.
In a food processor break almond paste into small pieces. Pulse in both sugars and flour.
Once mixture is finely ground, slowly add egg whites until dough comes together.
Pour pine nuts in to bowl
Use a spoon and slightly wet hands, scoop small spoonfuls of dough into the bowl of pine nuts. Roll around until coated and place on baking sheet lined with parchment paper.
Cook for 10-12 minutes or until done.
